Erissery


Yam-(chena) -3/4 cup cut it into small cubes
Raw plantain-(pacha kaya) -3/4 cup (peel and split the 
banana length wise n Cut it into small pieces)
chilli powder-1/2 tsp
turmeric powder- 1/4 tsp
pepper powder-1/2 tsp
grated fresh coconut-1/2 cup
garlic -3 cloves
cumin seeds-1/2 tsp
coconut oil-2 tbsp
urad daal-1 tsp
mustard seeds-1/2 tsp
curry leaves
dried red chillies-2-
water-enough
salt-
1-cook yam n banana (raw plantain) along with pepper powder,chilly powder,turmeric ,little salt n enough water.
2-Grind together half a quantity of grated coconut ,garlic n cumin seeds-(no need to add water.just blend it for few minutes)
3-cook well until all the water from the yam mixture dries up.(it should be dried) ,add the blended coconut mixture and mix well on low flame.
4- take a small pan add 2 tbsp coconut oil splutter mustard seeds ,1/4 tsp cumin seeds,urad daal ,dried red chilly,curry leaves and then add the remaining grated coconut and saute well on low flame till golden brown color.
5-finally add this sauted coconut mixture in to the vegetable mixture.serve hot with rice.

Cauliflower Manchurian


INGREDIENTS

Cauliflower, separated into florets 500 grams

Cornflour- 4 tbs

maida-4tbs

ginger garlic paste-2tsp

pepper powder-1tsp

Garlic- 1/2 tsp

Ginger-1/2 tsp

green chilly-2-4

Green capsicum- 1 small

spring onion-4tbs

Onion -2

Soy sauce 2 tablespoons

Vegetable stock 11/2 cups(or water)

Vinegar 2 tsp

tomato sauce-2tsp

chilly sauce-2tsp

METHOD
Wash and drain cauliflower florets. Make a batter of cornflour,maida,pepper powder.ginger garlic paste salt and water. Dip each cauliflower floret in the prepared batter and deep fry till golden brown.
To make the sauce, heat two tablespoons of oil in a pan and gently fry the garlic and the ginger . Add the chopped capsicum green chilly and onion. add the all sauces nd vegetable stock. Bring to a boil, reduce heat and simmer for two minutes. Add the vinegar nd salt to taste. Stir in the dissolved cornstarch (dissolve 1 tbsp corn flour in little water)and stirring continuously till the mixture thickens and starts bubbling. Add the fried cauliflower florets and spring onion. Mix well

Coconut Veg Curry


1-Diced vegetables - as required ( i used the following veggies:2 carrots,2 potatoes,1/4 cup green peas,1 cup cauliflower n 1 cup beans.)
2-slit green chillies-2
3-red chilly powder-1 tsp
4-turmeric powder-1/2 tsp
5-salt
FOR GRINDING:
grated coconuts-2 cups
cumin seeds-2 tsp(cheriya jeerakam )
garlic-2 small peice

METHOD:cover n cook the vegetables in 1 cup of water along with the all ingredients...(do not over cook the veggies)..grind coconut ,cumin seeds n garlic to form a thick paste... n this add this to the vegetables n mix everything well...allow it to boil...heat a pan pour oil splutter mustard seeds,curry leaves,dried red chillies .. n pour this on the gravy n serve hot with chappathy..

GreenPeas Curry


peas - 1cup(boiled)
onion - 2
tomato - 1
cumin - 1tspn
turmeric powder - 1 pinch
chilli powder - 1tspn
coriander powder - 1 tspn
garam masala powder- half tspn
grated coconut - 3 spoons
cream - half cup
coriander leaves n kasoori methi.

Method: cut onion n tomatoes into small pieces....heat oil in a pan, add cumin,one onion n fry till the raw smell of onion goes...then add tomatoes n fry till it becomes soft....then add chilli powder,turmeric powder n coriander powder and fry...then add grated coconut n fry for some time n set aside...once it cools off grind all these items in a blender n set aside..

Heat oil in a pan, add the remaining onion n fry till it becomes golden brown...then add the grounded mix n salt, fry this for sometime...then add boiled peas with water n cook for sometime n take out from heat.

Finally add cream , coriander leaves n kasoori methi ..

Chana Daal


1 cup chana daal or (1/2 cup masoor daal+1/2 cup chana daal)
1/2tspSalt .
1/2tsp red chilli powder
1/2tsp turmeric
Take a pressure cooker and cook daal with salt,turmeric and chilli pwdr for 5-10 mints .

INGREDIENTS
oil
1 Onion sliced
2-4 whole red chillies
1 bay leaf
8 black pepper corns
4 cloves
1 bigTomato chopped.
1tspSalt 
1tsp red chilli powder
1tsp cumin seeds
1tbsp Kasuri methi 
2 green chillies 
3 tbsp green corriander chopped
2tbspGinger juilliene( garnishing.)
1/2tsp garam masalapowder
1 tbsp lemon juice

METHOD:
Fry onion till light golden, add cloves, blackpeppercorn, bay leaf & whole red chillies.
Then add tomatoes stir, add salt, redchilli powder, cumin seeds & kasuri methi, stir, close lid and cook for 10 mins on low heat.
Add boiled daal & green chillies, cook for 15 mins.
Add ginger & green corriander, close lid cook on low heat for 2-5 min.finally add the lemon juice..
Garnish with garam masala, ginger & green coriander. Serve with naan or chappatti..

Bitter gourd stir fry

Bitter gourd-1 big(finely sliced)
Green mango(raw mango)-1 sliced
onion-1 finely chopped
green chillies -2
grated ginger-3/4 tsp
fenugreek seeds-1/2 tsp
mustard seeds-1/2 tsp
turmeric powder-1/2 tsp
salt
curry leaves
coconut oil-1 tbsp

1-heat coconut oil in a pan and add mustard seeds,curry leaves n fenugreek seeds.
2-Then add the onion ,green chillies,and saute well.
3-Add bitter gourds and sliced green mangoes n stir well
4-finally add little turmeric n salt , keep stirring n combines well
5-Bring to low heat and stir occasionally for about another 10 minuts

Veg Kuruma

1. Potato -1cup
2. Carrot-1cup
3. Beens-1cup
4. Green peas-1cup
5. Tomato-2
6. Cauliflower -1cup
7. Cashew –little
8. Fennel seeds -1tsp
9. Coconut- 1cup
10. Chilli powder-1tsp
11. Coriander leaves-
12. Garam masala-1tsp
13. Coriander powder-1tsp
14. Green chilli-2
15. Butter-
16. Turmeric powder-1tsp
17. Mustard/curry leaves
18. Tamarind

Take a cooker and put all the vegetables (except tomato)and cook half only. Item 7-13 pour in a mixture and grind well. Take a pot and pour oil , mustard and curry leaves. Add the grinded mixture and fry well. Add tomato, green chilli,turmeric powder and fry well. Add the half cooked vegetables and mix well. If you need you can add little water. Prepare the tamarind water and add it. Garnish with butter and curry leaves.

Coconut Green Peas masala

  1. Green Peas-1cup
  2. Chopped Potato-1
  3. Chopped Carrot-1
  4. Onion-1(medium)
  5. Green Chilly-4
  6. Ginger-1tbsp
  7. Garlic-1tbsp
  8. Tomato-1(large)
  9. Coriander Leaves
  10. Curry Leaves
  11. Coriander powder-2tbsp
  12. Chicken masala-2tbsp
  13. Garam masala-1tsp
  14. Coconut milk-1cup
  15. water-3 cup
  16. oil
  17. salt
  • Soak green peas for at least 5-6 hrs
  • Take a pressure cooker ,add item 2,3,4,5,6,7,8,15 17 and keep up to 5 whistle under fire.
  • Keep the pressure cooker under very low fire and add item 9,11, 12,13 and 14 and take out once its completely boiled.
  • Take a small frying pan , add oil and saute 1tsp finely chopped onion and curry leaves and add to the green peas masala curry. !!!!!
