Avocado Pudding


Ingredients: 
avocado 2small, 
condensed milk 1 tin ,
 milk 2 cups, , 
china grass 7grm, 


method : 
Grind avocado with condensed milk..
boil milk and china grass till
china grass is melt.
add avocado paste to the milk and mix it very well.,
if u want more sweet u can add sugar in it.. refrigerate for
4 hrs.
sprinkle pistachio & almond

Chattipathiri


1.Make samoosa Masala ( I used Beef)
2.Mix flour/salt and prepare enough chappathi
3.Take a non stick pot and add littile ghee
4.Beat 2 eggs/milk and dip one chappathi and put it in the pot
5.add the samoosa masla on the top of the chappathi and repeat the same by dipping all other chappathi and put the masala one by one.
6.pour the remining beated egg mixture on the top.
7.simmer it for 10 mts
8.turn it and agin simmer for 5 mts

your chattipathiri is ready

Sweet Palada


Egg: 1
Small onion : 2-3
White Flour- ¼ cup
Salt –for taste
Turmeric powder-1/4 tsp
Crushed cumin seeds- 1tsp

For filling :
Grated coconut -1/2 cup
Sugar – for taste
Cardamom -3 -4
Mix all and make it ready the filling


Method:
Mix egg, flour, small onion, turmeric, cumin and salt in a pot and beat well with little water and make a smooth batter. Use a fry pan and prepare the Dosa . add the filling and make it as roll shapes.

Your sweet palada is ready now

Broasted Chicken


Ingredients:

Chicken-8 pieces
Green chillies-8
Ginger garlic paste-1tsp
Lemon juice-2 tsp
Crushed pepper-1tsp,
Egg-1,
White flour-4 tbsp,
Corn flour-2 tbsp
Salt-to taste .....

Preparation method:

1:marinate chicken with green chillies, ginger garlic paste, crushed pepper, lemon juice and salt. keep this on refrigerator for 5 hours. 
2:after 5 hours add 1 egg in this chicken. 
3:in another bowl mix flour and corn flour and little salt.Dip chicken pieces well in this flour and deep fry for 20 mints on low flame....
broasted chicken is ready!!!its so delicious..try it friends n enjoy!!!!

Yam-(chena) -3/4 cup cut it into small cubes
Raw plantain-(pacha kaya) -3/4 cup (peel and split the 
banana length wise n Cut it into small pieces)
chilli powder-1/2 tsp

1-cook yam n banana (raw plantain) along with pepper powder,chilly powder,turmeric ,little salt n enough water.
2-Grind together half a quantity of grated coconut ,garlic n cumin seeds-(no need to add water.just blend it for few minutes)
3-cook well until all the water from the yam mixture dries up.(it should be dried) ,add the blended coconut mixture and mix well on low flame.
4- take a small pan add 2 tbsp coconut oil splutter mustard seeds ,1/4 tsp cumin seeds,urad daal ,dried red chilly,curry leaves and then add the remaining grated coconut and saute well on low flame till golden brown color.
5-finally add this sauted coconut mixture in to the vegetable mixture.serve hot with rice.

Cauliflower Manchurian


INGREDIENTS

Cauliflower, separated into florets 500 grams

Cornflour- 4 tbs

maida-4tbs

ginger garlic paste-2tsp

pepper powder-1tsp

Garlic- 1/2 tsp

Ginger-1/2 tsp

green chilly-2-4

Green capsicum- 1 small

spring onion-4tbs

Onion -2

Soy sauce 2 tablespoons

Vegetable stock 11/2 cups(or water)

Vinegar 2 tsp

tomato sauce-2tsp

chilly sauce-2tsp

METHOD
Wash and drain cauliflower florets. Make a batter of cornflour,maida,pepper powder.ginger garlic paste salt and water. Dip each cauliflower floret in the prepared batter and deep fry till golden brown.
To make the sauce, heat two tablespoons of oil in a pan and gently fry the garlic and the ginger . Add the chopped capsicum green chilly and onion. add the all sauces nd vegetable stock. Bring to a boil, reduce heat and simmer for two minutes. Add the vinegar nd salt to taste. Stir in the dissolved cornstarch (dissolve 1 tbsp corn flour in little water)and stirring continuously till the mixture thickens and starts bubbling. Add the fried cauliflower florets and spring onion. Mix well

Cheese Cake


Ingredients
Biscuits crumbled 250g
Butter melted 100g
Cream cheese 200g
Condensed milk 1tin(395g)
Nestle cream 170g
vanilla powder 1 teaspoon
Lemon juice 1 tablespoon
Gelatin powder 1 tablespoon dissolved in 60ml hot water
Method
1. Combine biscuit with butter.press mixture into a loose bottom cake pan.place in fridge for 10 minutes
2.Using a food processor,beat cream cheese,condensed milk,nestle cream,vanilla powder and lemon juice until smooth.
3.Stir the melted gelatin into the cream cheese mixture,spoon over the biscuit and then place in fridge for 2-3 hours until completely set.

Apple Veg Salad


Apple-1
Cabbage -small Piece 
Grated Carrot -1
Chilly-2
lemon-1

Mix all the things together . add pinch of salt, black pepper and lemon juice.

Garlic Sauce


1 large potato
6-cloves of garlic 
2-3 tbsp mayonnaise
2 tbsp yogurt
1 tbsp fresh cream
1 tbsp vinegar or lemon juice
2 tbsp olive oil 
pinch of salt

Boil the potato with 6 cloves of garlic and a pinch of salt until potato is tender. Drain the water.

Add all the ingredients into a blender including the boiled potato and garlic. Blend until completely smooth. . Adjust salt to your taste. 

Sauce is ready! have it with kubs ,chapathi n fried chicken.

Coconut Veg Curry


1-Diced vegetables - as required ( i used the following veggies:2 carrots,2 potatoes,1/4 cup green peas,1 cup cauliflower n 1 cup beans.)
2-slit green chillies-2
3-red chilly powder-1 tsp
4-turmeric powder-1/2 tsp
5-salt
FOR GRINDING:
grated coconuts-2 cups
cumin seeds-2 tsp(cheriya jeerakam )
garlic-2 small peice

METHOD:cover n cook the vegetables in 1 cup of water along with the all ingredients...(do not over cook the veggies)..grind coconut ,cumin seeds n garlic to form a thick paste... n this add this to the vegetables n mix everything well...allow it to boil...heat a pan pour oil splutter mustard seeds,curry leaves,dried red chillies .. n pour this on the gravy n serve hot with chappathy..

GreenPeas Curry


peas - 1cup(boiled)
onion - 2
tomato - 1
cumin - 1tspn
turmeric powder - 1 pinch
chilli powder - 1tspn
coriander powder - 1 tspn
garam masala powder- half tspn
grated coconut - 3 spoons
cream - half cup
coriander leaves n kasoori methi.

Method: cut onion n tomatoes into small pieces....heat oil in a pan, add cumin,one onion n fry till the raw smell of onion goes...then add tomatoes n fry till it becomes soft....then add chilli powder,turmeric powder n coriander powder and fry...then add grated coconut n fry for some time n set aside...once it cools off grind all these items in a blender n set aside..

Heat oil in a pan, add the remaining onion n fry till it becomes golden brown...then add the grounded mix n salt, fry this for sometime...then add boiled peas with water n cook for sometime n take out from heat.

Finally add cream , coriander leaves n kasoori methi ..

Chana Daal


1 cup chana daal or (1/2 cup masoor daal+1/2 cup chana daal)
1/2tspSalt .
1/2tsp red chilli powder
1/2tsp turmeric
Take a pressure cooker and cook daal with salt,turmeric and chilli pwdr for 5-10 mints .

INGREDIENTS
oil
1 Onion sliced
2-4 whole red chillies
1 bay leaf
8 black pepper corns
4 cloves
1 bigTomato chopped.
1tspSalt 
1tsp red chilli powder
1tsp cumin seeds
1tbsp Kasuri methi 
2 green chillies 
3 tbsp green corriander chopped
2tbspGinger juilliene( garnishing.)
1/2tsp garam masalapowder
1 tbsp lemon juice

METHOD:
Fry onion till light golden, add cloves, blackpeppercorn, bay leaf & whole red chillies.
Then add tomatoes stir, add salt, redchilli powder, cumin seeds & kasuri methi, stir, close lid and cook for 10 mins on low heat.
Add boiled daal & green chillies, cook for 15 mins.
Add ginger & green corriander, close lid cook on low heat for 2-5 min.finally add the lemon juice..
Garnish with garam masala, ginger & green coriander. Serve with naan or chappatti..

Galaxy choco cake


galaxy chocolate bars-3
all purpose flour-1 1/2 cups
milk-1/2cup divided
baking powder-2 tsps
salt-1/4 tsp
plain yogurt-1/4 cup
un salted butter-110 gms
sugar-3/4 cup
large eggs -2
vanilla extract-1 tsp
1-Melt the chocolate along with 1/4 cup of the milk in a stainless steel bowl that has been placed over a sauce pan of simmering water,remove from heat and set aside.
2-In a separate bowl whisk the flour with baking powder and salt.
3-In a small bowl whisk the yogurt with remaining 1/4 cup of milk,and the vanilla extract.
4-In ur egg beater,beat the butter n sugar until light and fluffy.Beat in the eggs one at a time,until well combined.
5-with the mixer on low speed alternately add the flour mixture and and yogurt mixture.
5-finally add the melted chocolate mixture to the batter and fold in.
Mix the batter with a knife or wooden skewer.
6-Pre heat the oven 325F and place rack in the center of the oven.Butter n lightly flour a loaf pan.
bake in 325F pre heated oven for 40-45 mints or until a tooth pick inserted at the center comes out clean.

Zebra cake


Ingredients
Eggs-4 large
granulated sugar-1 cup(very fine- normal sugar)
milk-1 cup( at room temperature)
oil-1 cup
all purpose flour-2 cups
1/3 tsp vanilla powder
baking powder-1 tbsp
dark coco powder-2 tbsp (make sure it is not very bitter)
1- In a large mixing bowl combine eggs and sugar.Using an electric mixer
beat (on high speed )until the mixture is creamy and light in color.

2-Add milk n oil ,and continue beating until well blended.

3-In a separate bowl combine and mix flour,baking powder n vanilla powder.Gradually add the flour mixture to the wet ingredients and beat on very low speed just until the batter is smooth and dry ingredients are tthoroughly incorporated.(do not over beat to prevent air pockets from forming in the batter)

4-Divide the mixture in to two equal portions,Keep one portion plain.Add coco powder into another, and mix well.
5-pre- heat the oven to 350F (180 C)

6- Grease the baking pan with butter n dust with flour.

7-The most important part is assembling the cake batter in a baking pan.Scoop three table spoon of plain batter(U can also use a ladle that would hold three table spoons) in to the middle of the baking pan.
Then scoop three table spoon cocoa batter and pour it in the center on top the plain batter.
(Do not stop and wait until the previous batter spreads.
Do not spread the batter or tilt the pan to distribute the mixture.It will spread itself and fill the pan gradually).continue alternating the batters until u finish them.

8- Bake in the oven for about 40 minuts or until a tooth pick inserted into the center comes out clean

Coffee cake


120g butter, softened
1/2 cup sugar 
1 cup plain flour
grated lemon rind-1/2 tsp
instant coffee powder-1 1/2 tsp
milk powder -2 tbsp
baking powder-1 tsp
eggs-2
milk-3 tbsp

Method:
1-mix all the dry ingredients in a bowl-( plain flour ,baking powder,instant coffee powder,n milk powder.)
2-In a bowl ,beat butter, lemon rind and sugar together, till light and pale.
3-Then add eggs one by one, keep beating.
4-lastly add sifted flour , baking powder,instant coffee powder,milk powder over the butter mixture and beat on very low speed about 1mints. Then add milk. Mix with metal spoon.
Once it's thoroughly mixed, spoon batter into a greased cake tin and put it into a pre-heated 180-degree oven for about 20 to30 minutes

                          

Muttamala Pathiri


For Muttamala
Egg-30
Sugar-3 1/2 glass
Water-3 glass

Method:
Separate egg white and yolk with your hands.Sieve all the 30 egg yolks and keep aside.Heat a nail and make hole from inside in a plastic glass.Keep the hole closed using your finger and pour the egg yolk into the glass.Prepare the sugar syrup.(in a pot add sugar and water and boil it till being sticky)When the sugar syrup boils remove your finger from below the glass and rotate the glass till the egg yolk in the glass finishes.Then using a big spoon take the cooked chain (maala) to a plate.Again pour the egg yolk to the glass and repeat the procedure again till all the egg yolk finish.

Pinnaanathappam

Ingredients:
Egg white-separated while making the chain(take half of the egg white for one tray)
White flour-2 table spoon(for 15 egg white)
Cardamom-2
Salt-1 pinch
Sugar syrup-left from making the chain(add more sugar if not enough)


Method:
Blend all the ingredients in a mixer.Brush ghee in a non-stick pan and pour the mix in sim fire for15-20 minutes.
In a tray cut the egg white cake and keep one by one.Above it place the egg chain made before and garnish with cherries.

Mughlai chicken


whole chicken-800 gm
1 cup yoghurt-well beaten
1 tsp each of turmeric,garam masala,chilli powdr

1 tbsp each of ginger garlic paste
4-cloves
4-cardamoms peeled
8-black pepper corns
15 almonds
1 tsp-cumin seeds
2-tsp coriander seeds
2 -large onions finely chopped
2 big tomato puree
1 cup water
oil
salt to taste
fresh cream -2 tbsp
fresh cream and coriander leaves for garninshing

Make cuts on the chicken.In a bowl mix together half of the ginger garlic paste and red chilli pwdr.Add the garam masala,turmeric,yoghurt and salt to taste.mix well.Rub this marinade in to chicken well and allow to marinate in the fridge for 1 hour.
In a pan roast together cumin seeds,coriander seeds,clove cinnamon,pepper corns,cardamoms and almonds till they are aromatic.
Fry the sliced onion till brown
Grind together browned onions,roasted spices ,and the remaining ginger garlic paste with little water.
Heat oil in a heavy bottomed pan till hot add the chicken(with out marinade)and fry on medium heat for 3 to 5 min.or till it becomes light brown colour.remove fried chicken from the pan keep it aside.
In the same pan add little more oil and fry the paste on medium level for 2 minuts
Add the chicken,remaining marinade,tomato puree,water,1/2 tsp red chillipwdr and salt.
mix well .cover and cook on low heat for 25 mints or till the chicken is fully cooked.Add fresh cream anfd garnish with coriander leaves.... .enjoyyy..serve hot with chappathi

Tandoori chicken


chicken-cut in to 6 big pieces
coriander pwdr-1 tsp
cumin seed pwdr-1 tsp
garam masala pwdr-1 tsp
kasoori methi-1 tsp
pepper pwdr-1 tsp
red chilli pwdr-1 tsp
ginger garlic-1 tbsp
lemon juice-1 tbsp
salt
oil-2 tbsp
turmeric-1 tsp
red color-
youghurt-6 tbsp.

clen and cut 2 or 3 long slits on each piece.Apply salt ,turmeric,chilli pwdr,and lemon juice..all over the chicken and keep aside for 15 minuts.
2-take a bowl add coriander pwdr-cumin pwdr-kasoori methi-garam masala-pepper pwdr-ginger garlic paste-2 tbsp oil-red colour-and to make a paste..and mix well with youghurt.add 1/2 tsp salt to the paste ..mix well..
3-Apply it all over the chicken ,making sure to apply well between all the slits and inside.keep aside for 2-3 hours
4-pre heat the oven 424 degree F and grill for 20-30 minuts or till the chicken is tender.
5-Remove from oven garnished with sliced onions,tomatos and lime wedges..and spread little chat masala on it..and also can be heated on griddle if serving later.enjoy...serve hot with chapathi or naan.

Haramasala chicken


chicken-750 gm
onion-1 (finely chopped)
ginger garlic paste-1 tbsp
cumin seeds-1/2 tsp
black pepper pwdr-1/2 tsp
green chillies-4
chopped mint leaves-3/4 cup
fresh coriander leaves chopped-1/2 cup
garam masala-1/4 tsp
yoghurt-1 1/2 cup
preparation method
1-In a mixer grinder add coriander +mint+ green chillies..and to make a fine paste.
2.Take a pan add some oil .add cumin seeds,ginger garlic paste and finely chopped onion..saute for 1 minute..
3-Then add chicken pieces,black pepper and salt..saute well..when chicken is half tender add mint coriander paste ...then add yoghurt..stir well...let it cook till done finally add 1/4 tsp garam masala...and serve.(U can add little water if u want more gravy)

Pettiyappam


Bread-8pcs
boiled eggs-2
Flour-for making 4 chappathi 
chicken kheema=400g
chopped onion-3
ginger/garlic paste-1tbsp
turmeric-1/4tsp
chillipowder-1/2tsp
garam masala-1/2tsp
green chilli-3
salt-for taste
oil for frying

1.mix kheema with turmeric/chillipowder/salt and boil well
2.fry onion until golden brown
3.add chilli/ginger/garlic and fry it
4.add chicken kheema and fry it well
5.add garama masala and corinder leaves

Take one bread and add the masala on top of it.
add 1/2 of the boild egg piece and cover it with another bread piece
mix flour/dalda/salt and make chappathi dough.
prepare very thin chappathi and cover the previously prepared bread.
beat 2 eggs/pepper/salt and make a mixture
dip the chappathi coverd breads in it and fry well

Chickenrolls


For the dough
Maida-2 cups
salt
water
Make a soft dough and keep it aside.
Ingredients
eggs-2+little pepper pwdr+little salt-and beat well
chicken breast -2 big pieces (boil with little turmeric,chillil pwdr ,salt and shredded)
onion-2 sliced
lemon juice of 1 lemon
garam masala-3/4 tsp
Take a non stick pan add little oil and fry the shredded chicken and add garam masala.fry well till it becomes crisp and golden brown ,remove from fire and keep it aside
Take the dough and make 8 big balls.Roll the balls thickly(Not thin like chappathi)and place it on hot non stick tawa and spread 2 tbsp beaten egg on it.and cook both sides are done.
Take a sheet of aluminium foil and place 1 bread on the foil and spread fried chicken ,sliced onion and 1/2 tsp lemon juice.roll it tight.cut into pieces and serve hot....Enjoy.

Springrolls


chicken breast-1 piece( boiled and shredded)-
onion-1 chopped-
carrot-1 grated-
cabbage-1/4 cup grated-
capsicum-finely chopped 1/4 cup-

spring roll sheets-
Take a nonstick pan add 1 tbsp oil and fry the chopped onion .when it becomes light brown add shredded chicken saute for a minute then add all the veggies and pepper powder,soy sauce ,Ajinomoto (optional) and little salt..mix well and saute them for just 2 to 3 minutes. Remove from fire and keep it aside.Take spring roll sheets and make rolls.deep fry them.serve hot with ketchup or chilly garlic sauce..Enjoy.

Easy Rice Pizza


basmathi (biriyaani rice, I used jeerakashala)-1glass

Take a fry pan and saute the onion until golden brown and add gingergarlic paste, green chilly and fry.Add garam masala , minced chicken and fry well.garnish the corinader leaves.

grind rice ,salt with 3 eggs and make it smoooth batter.

Take a non stick pot , add little ghee,pour half of the rice batter and cook for a short period then add chicken masala on top of it,pour the remining batter.put tomato,onion and capsicum on top of it.cook for 15-20 on a low flame

Spaghetti rolls


Ingredients
Spaghetti boiled 2 cups
Potato boiled and mashed 1 cup
Tomato sause 2 tbsp
Onion chopped 2 tbsp
Egg yolk 1
Salt 1 tsp
Black pepper 1 tsp
Lemon juice 1 tbsp
Coriander leaves 2 tbsp
Green chilies 2 chopped
Egg beaten 1
Flour for coating
Bread crumbs for coating
Method
1. Cut spaghetti into pieces and boil till tender.
2. In a bowl mixed boiled spaghetti, boiled and mashed potato, tomato sauce, onion, egg yolk, salt, pepper, , lemon juice, coriander leaves and green chilies.
3. Shape the spaghetti mixture into fingers
4. dip in beaten egg,then roll in flour and breadcrumbs, shallow fry. Serve with ketchup

puff pastry sheets- 8 (squares)-each pastry cut into 4 small squares
1 1/2 carrots =grated

heat a nonstick pan with ghee/oil,add grated carrot along with coconut and almond powder.stir well for 2 to 4 minutes,then add honey ,mix well just heat for 1 min on low flame.remove from flame .keep it aside.
Take small square of puff pastry,spread the carrot almond mix on it..and bake 160 degree C till it becomes light brown colour..Then garnish with a drop of condensed milk and nuts..Its very easy and yummy snack..try it friends..enjoy

Egyptian pan cakes filled with nuts


For the batter
1/2 cup-warm milk
1 tsp -yeast
1 tsp -sugar
1 tsp-baking pwdr
1 1/4 cup-flour
1/4 cup-semolina
salt-a pinch
water-1/2 cup
mix milk, sugar and yeast and leave for 10 mints.
then add to the rest of ingredients and mix well.leave in a warm place for 1/2 an hour.
Heat a non stick pan pour the batter mixture making small round circles,the size u want,bake on one side only..Remove from heat add the nuts mixture u want and close it well.and deep fry it for 1 -2 mints .Lastly dip the pan cakes in to the sugar syrup(1/4 cup sugar+little water) .then drain. enjoy...sweet pancakes with nuts r ready..

Pumpkin pathiri


1.flour 1 1/2 glass, salt and water(enough) for making dough

11.beef boiled water-3/4glass

Method:
1.make flour dough by using item-1
2.cook beef with item-3 and mince well .keep the water separate as item 11
3.take a deep fry pan and saute onion ,then add item 6 and fry well.after add item 7 and fry again until the smell comes out.then add minced beef and cook again .This is the filling item
4.take a pan and fry the rava little and keep a side.
5.Using the same pan pour oil and fry onion,green chilly and the beef boiled water and boil it.
6.once its boiled add the rava and make uppumaav. its for stuffing
7.take a portion of the rava filling mix with beef filling and keep a side.
8.make poori little big size then add beef filling, boiled egg and frill the poori from the corners .cut the top of the frill then put it in a deep frying pan and fry it and allow to drain the oil.
9.make another poori little bigger than previous then add the rava filling. after that keep the previosly fried poori stuff upside down then do the frill. cut the top and fry again.

Cheezybreadsnack


ingredients : 
bread slices- 4 
2-medium potatoes (boiled)
1-small onion chopped
1-chicken stock (maggi)
2-eggs (boiled)
method : heat 1 tsp oil i a pan add onion and saute till soft..den add chicken stock n boiled potatoes..keep the filling aside.

Remove the edges of the bread n cut into 4 pieces.take 1 piece n place some potato masala on it and a piece of an egg ...den take another piece of bread apply some cheese n close it....

in a bowl add white flour,salt,chilly powder,turmeric pd,pepper pd n mix it..now by pouring little water at a time make a smooth batter .

heat oil in a kadai..dip bread pieces in the batter n fry till crisp on medium flame.......serve hot with tomato sauce
